GIFT & ENJOY

Today I have been invited to a friend's birthday. Thinking what to buy for her 30th birthday. ??? No idea...hahaa!!! SO... decided to bake cupcakes for her. Never thought that I have such opportunity to make some cupcakes with fondant deco for a friend's birthday! hehee :P This is my very own 1st fondant work!!!! Really satified with my work!



Think of Garden theme for her.. cause she is having a BBQ party in the afternoon. BUT... yesterday received a sms from her that she will changed to night. haha.. but is still BBQ la... Garden theme should be ok... With a moist chocolate cupcake!

Here's the Moist Chocolate Cupcake recipe : -

A
  • 90g cocoa powder / 65g chocolate powder
  • 180g water
  • 130g caster sugar ( reduced )
  • 1 tsp chocolate emulco


B
  • 5 large eggs
  • 1/4 tsp salt
  • 1 tsp vanilla essence
  • 130g caster sugar ( reduced )

C

  • 220g self raising flour

D

  • 250g melted butter
  1. Mix A over stove until the sugar dissolved & let it cool.
  2. Beat B till light & fluffy.
  3. Add in A until mixture is smooth.
  4. Fold in C, mix until well-blended.
  5. Add in D, mix well.

Another project here.... ordered by my husband's cousin for her son's birthday. Simple & nice right?


& also tis... Chocolate Cheesecake for adults on the party!!!! Enjoy...

Here's the recipe :

Base :

  • 130g crushed marie biscuits
  • 30g brown sugar
  • 80g melted butter

Filling :

  • 400g cream cheese
  • 60g caster sugar ( reduced )
  • 1 1/2 tbsp cocoa powder
  • 2 tsp instant coffee powder
  • 3 eggs
  • 150g whipping cream
  • 160g melted chocolate
  1. To make base, mix all ingredients. Press mixture into 7" loose base pan. Freeze.
  2. To make filling, beat cream cheese, sugar, cocoa powder & coffee powder until smooth.
  3. Beat in eggs, one at a time, beating well after each addition.
  4. Stir in whipping cream.
  5. Add in melted chocolate, stir until well-blended. Pour filling into prepared tin.
  6. Bake in preheated oven @ 170c for 40-45 minutes or until cooked. Remove from heat & leave to cool. Chill in fridge.

Mocha Cheesecake for Father's Day, ordered again from a friend. He loves this cake so much. He ordered this from me last month for Mother's Day! Now... again.. hahaa
