CHICKEN RICE




My family's dinner is prepared my my mum. Everyday my hubby vil go my mum's hse to ta bao dinner back for us :D But this whole month i need to cook dinner myself because my mum went to work for confinement lady. Haiz.... really dunno what can i cook.. HEADACHE ! Lunch & Dinner... my brain stuck. Can't think what to buy in the market. Chicken rice is my family & parents favourite :D but this chicken rice is different frm the store that sells chicken rice. We used to named this (yet wok sok gei fan) means cooked the everything in a wok.
  • rice (soaked for 3 hrs) and drained 
  • chicken (cut into pieces)
  • dried black mushrooms (soaked & sliced)
  • chinese sausages (lap cheong) sliced
  • ginger -sliced
  • oyster sauce
  • light soy sauce
  • pepper 
  1. Heat up wok with oil, stir-fry ginger & chinese sausages until fragrant.
  2. Add in black mushrooms, chicken. Stir-fry for 5 mins.
  3. Add in soaked rice,oyster sauce & light soy sauce ,stir-fry.Then, add in water until covered the rice. Let it to boiled & low down the fire for 10-15 mins. Keep stir-fry every 5 mins until cooked.

RAISIN BREAD




Everyweek seem to buy bread for my kids... was quite a boring.. cause need to think what to spread for her..hehhee:D This week, i'm so hardworking in my little kitchen... din buy bread for them... keep making funs with those recipes :D Today i made raisin bread...was my 1st time doing loaf bread.. wow... FANTASTIC... superb soft & Yummy :P This recipe was frm Don Yong.

  • 400g bread flour (HP flour)
  • 16g milk powder
  • 10g yeast
  • 55g sugar
  • 6g salt
  • 25g egg
  • 225g cold water
  • 60g butter (soften)
  • 250g crismis
  1. Put in the dry ingredients, & blend at slow speed for 1 min. Then, add in egg & water, mix well.
  2. Knead vit hands for abt 15 mins. Then add in butter, continue kneading for 15 mins Check whether dough is fully developed by stretching a small piece of dough with your fingers. If the dough can be stretched into a thin layer without tearing, it is ready. But if does not stretch well knead dough further till is pass the next stretch test.
  3. Wrapped the whole bowl with a cling wrap or plastic bag.
  4. Leave it in a warm place & proof dough for abt 1 1/2 hrs.
  5. Punch dough & knead again, round up the dough & proof for 15 mins.
  6. Roll it into a long strip, roll up into silinder shape, place into a greased baking mould, leave it to raise for 1 1/2 hrs.
  7. Brush a layer of egg wash & bake for 25-30 mis.

WHITE FOREST CAKE

Thinking wat can i make for my dear fren,Ivy's bday! Wat cake can i make???Last month my sis made tis cake for her hubby's bday. She told me,it's nice & yummy... so i decided to make tis for my dear fren. In tis portion, i made into 3 small tins (3-in). CUTE :D Tis time success vit my sponge cake :D YEAH ....

Sponge Ingredients :

250g sponge mix, 250g egg, 62g water, 62g melted butter

White Cream :

200g fresh cream(whipped), 100g white chocolate, 1 tbsp corn oil

Filling :

1/2 can lichee, 1/2 can black cherry, white chocolate slices (for garnishing)

  1. To make sponge cake, preheat oven,line bottom of a 7-in cake tin with greaseproof paper.
  2. Beat sponge mix, eggs & water in a mixer with high speed for 10 mins. Fold in butter.
  3. Bake for 30 mins. Remove & cool completely. Split into 3 layers.
  4. To make white cream, melt the white chocolate, stir in corn oil. Fold in whipped cream until blended.
  5. Spread white cream onto a slice of sponge cake, arrange with some lichee & black cherry. Spread some white cream & sandwich with another sponge cake. Continue layering until finished. Coat the cake with remaining cream. Sides & top with white chocolate slices for garnishing.

GREEN TEA MOUSSE CAKE


This weekend, my sis and her daughter are here for holiday. We've been trying out a few recipe such as buns and cakes. This is one of the cake.....Green Tea Mousse Cake! Mmm...yummy!
Looks healthy and refreshing right?! Yeah....its 'Green tea', i never try this before as i dun really like the taste of it. But after trying a bite of it....oh my god! i love it!!!
Its so easy to make, as its only leave to chill till harden. All u have to prepare is bake a thin slice of plain sponge and beat up the other green tea mixture. If those prefer chocolate or strawberry, you can always change it.

OREO BANANA CHEESECAKE

Last 2 days, my mum gave me a bunch of bananas.... wow.. too many for my family! So i came across this recipe from my new recipe book (Cheese Cake by Kevin Chai).It taste ok to me... cause the banana taste too strong. But my husband,parents & friends said nice, cause they like bananas. The banana covered the cheese taste, so it just feel like eating normal banana cake!Those who love bananas... can give it a try!



Base
  • 160g crushed oreo biscuits
  • 80g melted butter

Filling

  • 450g cream cheese
  • 100g caster sugar
  • 200g banana flesh
  • 1 tbsp lemon juice
  • 3 eggs
  • 150g sour cream
  • 1 tbsp cornstarch
  • 1/4 tsp banana essence
  • 2 tbsps Rum
  • 25g crushed oreo buscuits
  1. To make base, stir all ingredients until combined. Press mixture into base or 18cm cake tin. Chill in fridge for 1 hr (not stated in the recipes,but my friend told me is better to chill it, cause it's really soft without chilling it).
  2. To make filling, beat cream cheese, sugar, banana flesh & lemon juice until smooth. Beat in eggs, one at a time, beating well after each addition.
  3. Then beat in sour cream, cornstarch, banana essence & Rum. Stir in crushed oreo biscuits.
  4. Pour filling into tin. Bake for 40-45 mins. Remove & leave to cool. Chill in fridge.
