LIGHT SOY SAUCE CHICKEN



My daughter, Amber loves this so much. It's so easy & the sauce is very nice.




  • 2 tbsps sugar
  • 2 drumsticks
  • 3 tbsps soy sauce
  • 1/2 cup of water
  1. Melt sugar in a pan until golden brown. Add in the skin part of drumsticks 1st.
  2. Add soy sauce & water.Over turn the chicken.
  3. Cook for 1/2 hour or until cooked. Over turn it few times when cooking to get a nicer colour for the skin.

MARBLE CAKE


**Use butter cake recipe**

  1. Keep 1/4 portion of mixture & mix in coffee/cocoa paste(1tbsp coffee/cocoa powder + 3 tbsps hot water)
  2. Use a spoon to spoon coffee/cocoa mixture on top of the plain mixture
  3. Use a small knife to draw lines vertically to get marble effect,turn the baking tin & draw more lines to get stronger marble effect.

ANGKU KUIH (mum's recipe)



Paste

250g green beans (yellow in colour)
140g sugar
4 tbsps cooking oil



~Soaked the beans at least 2 hrs & rinsed.
~Steam the beans for 45-1hr with pandans leafs on top.
~While its still hot,add in oil & sugar,blend till fine.
~Make into small balls.
Tips** can be kept for a month in freezer **


Pastry
  • 200g sweet patatoes/pumpkin (cooked & mashed)
  • 300g glutinious flour
  • 1 tbsp rice flour
  • 2 tbsps sugar
  • 3 tbsps cooking oil
  • 200ml water (frm cooked sweet patatoes) - might not need that much,so have to add slowly.

    ~ Cut some banana leaves according to the mould for the base of the kuih.
  1. Mix all ingredients by hand.
  2. Make into a dough, leave for 20-30 mins.
  3. Grab a portion (as the mould using) then wrap in the prepared paste.
  4. Dust the mould with some glutinious flour before pressing in the dough.
  5. Knock out & place on th cut & oiled banana leafs. (brush alittle oil on top of the cut banana leaves)
  6. Use a steamer to steam for 8-10 mins(medium heat) for medium size mould.For small size mould,steam for 5-8 mins. When done, brush alittle oil on top of the kuih.
    **Before steam spray some water on top with a spray bottle frm far.This will ensure that the pattern comes out shape & clear after cooking**

CHINESE STEAM CAKE (鸡蛋糕)

  • 320g self raising flour
  • 350g sugar
  • 360g eggs (weigh with shells)
  • 1/2 tsp ovellet
  • 1 tsp vanilla essence (optional)
  1. Beat all ingredients together for 7-8 mins at high speed until texture sticky.
  2. Pour into bamboo basket (about 9") lined with baking paper.
  3. Make a cross line on top of the batter with an oiled knife.
  4. Steam for 30 mins over high heat.

FRUIT CAKE (mum's recipe)

  • 200g butter
  • 180g brown sugar
  • 300g cake flour
  • 500g mixed fruits ~sultanas & raisins(washed & soaked with brandy),orange peels, green & red cherries
  • 1 tbsp honey
  • 1 tbsp orange juice+water
  • 3/4 mix spice

  1. Beat butter & sugar until pale.
  2. Gradually add in eggs.
  3. Fold in flour.
  4. Add in mixed fruits, orange juice & mix spice.
  5. Pour into medium size tube pan lined with aluminium foil.
  6. Bake for 50-60mins.
  7. Once baked, shower with 2 tbsps of brandy.
  8. Cover with aluminium foil.
  9. When cool, refrigerate.

HONEYCOMB CAKE

~100g sugar
~50ml water
~5 eggs (size B)
~200g condensed milk
~100g all purpose flour
~1tsp soda bicarbonate
~120g melted butter






  1. Melt sugar until golden brown, then quickly add in water as a caramel.
  2. Beat eggs until half fluffy only then add in caramel,condensed millk,flour,soda bicarbonate & melted butter.
  3. Bake for 50 mins in a medium size greased & floured loaf tin.

BREAD PUDDING

  • 5 pieces of breads(cut into cubes)
  • 50g melt butter
  • 1 tin of tuna in oil
  • 4 eggs + 1/2tsp salt + 1/2tsp pepper
  • 20tbsps UHT milk

(A)Mix the melted butter with bread.Add in tuna & mix well.

(B)Mix beaten eggs & UHT milk together.

  1. Put 1/2 of (A) into a greased loaf tin.Pour in 1/2 of (B).
  2. Add in the other half of (A) & (B).
  3. Bake for 40mins. Serve hot.

INDONESIAN ROJAK



200g roasted peanuts

2 medium gula melaka(mashed)

3 red chillies

2tbsps assam paste + 1/2 bowl hot water (sifted)



  1. Blend gula melaka & chillies until fine.
  2. Add in roasted peanuts & assam juice. Blend awhile (peanut may not blended too fine).
  3. Add any fruits desire to serve.







My friends love my Rojak so much... they said mine is nicer then those selling outside! WOW... really appreciate it!!!!! thanks my dear friends.....!








CHOCOLATE RICE HAZELNUT COOKIES

  • 160g butter
  • 120g sugar
  • 200g chopped hazelnuts (toasted & chopped)
  • 160g chocolate rices
  • 200g mp flour
  • 1/2tsp bicarbonate of soda

  1. Beat butter & sugar until light & fluffy.
  2. Add in flour & bicarbonate of soda.
  3. Fold in hazelnuts & choc chips.
  4. Spoon mixture into small paper cups.Brush the top with beaten egg yolk.
  5. Bake for 20 mins.

CRISMIS BUN

I learnt this from secondary school during KHB subject.It's nice & soft inside! Is not crunchy like cookies.... i think that why it called BUNS :D My eldest sister & me like to make this for our kids's school party.It's easy & yummy.


  • 125g flour
  • 1tsp baking powder
  • 45g raisins
  • 45g marjerin
  • 1 egg
  • 1tsp vanilla essence
  • 45g sugar
  1. Mix flour,baking powder & marjerin together using hands(rubbing method).
  2. Add in sugar, eggs & vanilla essence. Mix well.
  3. Fold in raisins.
  4. Drop mixture by 1 1/2tsps or 1 tsp on a greased tray.
  5. Bake for 20-25mins.

EGG TART

Pastry
  • 150g butter
  • 25g icing sugar
  • 10g milk powde
  • 250g super fine flour
  • 1 egg yolk

Filling

  • 5 egg yolks
  • 2 egg whites
  • 200ml UHT milk
  • 75g sugar
  1. To make the pastry,mix the pastry ingredients to form a dough with hands. Chill dough in the fridge for 30 mins.
  2. Make filling by boiling the UHT milk & sugar with low heat until the sugar melted.Leave aside to cool.Add in the beaten egg yolks & whites(shift away the bubbles).Stir well.
  3. Roll out dough to 3mm thickness & line onto tart tins.Prick the bottom of the pastry all over with a fork.Bake blind for 10 mins.
  4. Fill the tart pastry with the filling mixture until 3/4 full. Bake for 15-20 mins or until the egg set.

BIRTHDAY CAKE






This is the 1st bday cake i made.I used ready sponge mix. Decorated vit chocolate & strawberries...

SOUR & SPICY PORK RIBS


  • 1kg pork ribs
  • 10 limes juice (suan gan)
  • 2 tbsps oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp black soya sauce
  • 1/4 tsp pepper
  • 3 cloves garlic
  • 8 dried chillies



  1. Marinate the pork ribs vit limes juice,oyster sauce,soy sauce,black soya sauce & pepper for at least 2 hrs.
  2. Heat oil in a pot & stir-fry the garlic & dried chillies. Add in the marinated pork ribs & cook for 20 mins.
  3. Add in 2 tbsps of sugar. Stir well & serve.

BUTTER CAKE


  • 6 egg yolks (grade A)

  • 4 egg whites - whisk until firm

  • 250g self raising flour

  • 1/4tsp baking powder

  • 1/2 cup water + 1/2 cup UHT milk

  • 200g sugar

  • 250g butter

  1. Beat sugar & butter until light & fluffy.

  2. Gradually add in the egg yolks,UHT milk & water.

  3. Add self raising flour slowly.

  4. Add into the prepared egg white.

  5. Pour mixture into a greased baking tin.

  6. Bake for 45 mins.

ALMOND NESTUM COOKIES


  • 300g flour

  • 100g rice flour

  • 1tsp baking powder

  • 250g butter

  • 100g sugar

  • 1 egg yolk

  • 200g nestum

  • 100g finely chopped almond(toasted)



  1. Beat butter,sugar,egg yolk & vanilla essence until light & fluffy.

  2. Add in flour,rice flour,baking powder(sifted) & mix well.

  3. Stir in nestum & almond.

  4. Roll out dough to 6mm thickness. Cut dough with desired pattern of cookie cutter.Place on greased tray.

  5. Bake for 20 min or until golden brown.

CHOCOLATE CHIPS ALMOND COOKIES

CHIPSMORE cookies???? It's nicer than CHIPSMORE.... hahahaalol.. this was what my friends told me!They like it so much.... & my eldest sister said ICHIBAN..YUMMY YUMMY :D
  • 250g butter,softened
  • 100g white sugar
  • 130g soft brown sugar
  • 1tsp vanilla essence
  • 1 egg
  • 250g chocolate chips
  • 50g chocolate chips, extra
  • 350g plain flour(mp)
  • 1tsp bicarbonate of soda
  • A pinch of salt

  1. Beat butter,sugars,vanilla essence & egg until light & fluffy.
  2. Add in flour,bicarbonate of soda & salt (sifted) & continue to beat well.
  3. Stir in chocolate chips & chill mixture in the fridge for 30 minutes.
  4. Drop mixture by tsps onto a tray.Flatten slightly to form 1.5cm thick moulds,making each 3cm apart.Sprinkle chocolate chips over & press lightly into the mixture.
  5. Bake for 12-15 mins.


Tip: To give these cookies an extra crunch, try adding nuts!
