My daughter, hubby & I love it so much.
Here's the super easy recipe :
- 3 medium size eggplants ( cut into strips )
- few pips of garlic ( chop finely & fried until golden brown) - keep aside
- 3-4 tbsps soy sauce
- Heat up 4 tbsps oil, pan-fry each side of the cut eggplants into golden brown. Dish up & keep aside.
- Pour away the remaining oil. Put back the fried eggplants into the wok with high heat & add in soy sauce. Stir fry & mix well.
- Garnish with fried garlic. Serve hot.
