STEAMED FISH WITH CRISPY GARLIC

Another simple dish wanted to share with you guys, STEAMED FISH WITH CRISPY GARLIC. I found this recipe from 1 of the restaurant i visited. It's taste nice & simple.


My kids & hubby love it so much. My kids love the crispy garlic so much, between they will ask for more fish too. Haha...


Not much ingredients for this, we need only fish ( whatever fish for steaming ). I'm using Siakap. What u need is oil, chopped garlic & soy sauce. Depends on your flavor, how many pips garlic you like. Heat up 1 tbsp or more oil & saute chopped garlic until fragrant & golden brown. Pour crispy garlic together with some oil on fish & add some soy sauce. Serve hot.

LEMON GRASS CHICKEN

What to cook for lunch & dinner???? It's not easy for us to think different dishes everyday, everyweek without repeating, right? Here's a recipe that i wanted to share with you all- Lemon Grass Chicken.

I love the lemon grass fragrant.


Here's the recipe :
  • 2 drumsticks ( cut )
  • 1 tbsp soy sauce
  • 2 tbsps oyster sauce
  • 3 stalks lemon grass
  • 2-3 big onion
  • 1/2 tsp dark soy sauce
  1. Marinate chicken with soy sauce & oyster sauce. Keep aside for 1/2 hr or more.
  2. Heat up 1 tbsp oil tp saute lemon grass & onions.
  3. Add in the marinated chicken & dark soy sauce & stir-fry for 5 minutes or until fragrant.
  4. Pour in 1/2 bowl of water & cover the lid. Simmer for 20-30 minutes.
  5. Add salt to taste.
  6. Thicken with corn flour water.

CHINESE NEW YEAR COOKIES

Hello my friends :D How's your new year 2011? Long time i din't pop up to my blog since last year. Last year???? Sounds very long ago right? But it's just 2 months ago. What i'm busy with? Hmm.... with housework, kids, trips & baking. Din't try new recipes because i'm lazy & love old traditional food. Hee hee... as my sister & cousin sister said i'm so traditional ( old fashion ). Hahaha :P
So.... 1 more week to Chinese New Year. What are you going to bake? I think most of you already done all bakings & prepared to welcome "Rabbit Year" ^.^

This year, i made 4 types of cookies. 2 of it was from my previous post ( Almond Nestum Cookies & Chocolate Chips Almond Cookies )

Bought a new cookies recipe book last year, Little Cookies Earn Big $ 做小饼赚大钱. Went through few times, at last decided to make this, Crisp Coconut Cookies 开心香椰酥饼. Beside, I'm submitting this to ""j3ss kitch3n" who are hosting the Aspiring Bakers #3: My Favorite CNY Cookie (Jan 2011).


After baking the 1st tray, i told my husband... when it's cold please try whether nice or not. He is my 白老鼠. Hahaha :P He said very nice & i tried too. It's very very nice. The coconut fragrant with pistachios & almond powder. Wah..... can u imagine how nice is't?

Here's the awesome recipe :

  • 200g butter
  • 70g icing sugar
  • 230g plain flour
  • 50g desicated coconut
  • 50g almond powder
  • 50g pistachios ( milled )
  1. Cream butter & icing sugar till light & fluffy.
  2. Fold in dried ingredients, mix to form a soft dough.
  3. Shape 6g each into rounds, use a fork to flatten lightly.
  4. Bake in a preheated oven at 150c for 20 minutes.

Another new & nice recipe Hap Tou Sou 核桃酥 from 1 of my mum's friend. The texture is different from what i did every year. It's more like those selling outside. My sister did this too & posted in her blog too. But she used butter instead of planta. I tried hers, i prefered planta. Beside, I'm also submitting this to ""j3ss kitch3n" who are hosting the Aspiring Bakers #3: My Favorite CNY Cookie (Jan 2011).

  • 500g flour
  • 1 tsp baking powder
  • 180g icing sugar
  • 1 tsp fine salt
  • 1 tsp alkaline water
  • 60g planta
  • 240-250g peanut oil
  1. Mix all the ingredients except oil with hand ( rubbing method ).
  2. Add in oil slowly become a soft dough.
  3. Shape into a small ball & make a hole in the middle of each cookies with a chop-stick.
  4. Brush some egg yolk on the cookies before baking.
  5. Bake at 150c for 13-15 minutes.
