- 250g butter,softened
- 100g white sugar
- 130g soft brown sugar
- 1tsp vanilla essence
- 1 egg
- 250g chocolate chips
- 50g chocolate chips, extra
- 350g plain flour(mp)
- 1tsp bicarbonate of soda
- A pinch of salt
- Beat butter,sugars,vanilla essence & egg until light & fluffy.
- Add in flour,bicarbonate of soda & salt (sifted) & continue to beat well.
- Stir in chocolate chips & chill mixture in the fridge for 30 minutes.
- Drop mixture by tsps onto a tray.Flatten slightly to form 1.5cm thick moulds,making each 3cm apart.Sprinkle chocolate chips over & press lightly into the mixture.
- Bake for 12-15 mins.

Tip: To give these cookies an extra crunch, try adding nuts!
