SALTED EGG CUSTARD BAO

Thinking something easy & fast to make for tomorrow's breakfast! YA..... is BAOs.... my daughter's favourite Red Bean Bao. Did some red bean baos for her :D & i tried something new this time.. Salted Egg Custard filling. This recipe was from a friend, TQ Hody for sharing!

My daughter & I tried.... She said very nice & to me.. I prefer cha siew bao & vege baoz :D hehee...

Here is the recipe for the filling :
A
  • 60g water
  • 80g sugar
  • 10g gelatine

B

  • 50g milk powder
  • 2 tbsps corn flour
  • 10g custard powder
  • 65g evaporated milk
  • dash of salt

C

  • 5 salted egg yolks ( steamed & crushed )
  1. Cook A - double boiling, until gelatine disolve.
  2. Add in B & C , let it cool & shift.

GIFT & ENJOY

Today I have been invited to a friend's birthday. Thinking what to buy for her 30th birthday. ??? No idea...hahaa!!! SO... decided to bake cupcakes for her. Never thought that I have such opportunity to make some cupcakes with fondant deco for a friend's birthday! hehee :P This is my very own 1st fondant work!!!! Really satified with my work!



Think of Garden theme for her.. cause she is having a BBQ party in the afternoon. BUT... yesterday received a sms from her that she will changed to night. haha.. but is still BBQ la... Garden theme should be ok... With a moist chocolate cupcake!

Here's the Moist Chocolate Cupcake recipe : -

A
  • 90g cocoa powder / 65g chocolate powder
  • 180g water
  • 130g caster sugar ( reduced )
  • 1 tsp chocolate emulco


B
  • 5 large eggs
  • 1/4 tsp salt
  • 1 tsp vanilla essence
  • 130g caster sugar ( reduced )

C

  • 220g self raising flour

D

  • 250g melted butter
  1. Mix A over stove until the sugar dissolved & let it cool.
  2. Beat B till light & fluffy.
  3. Add in A until mixture is smooth.
  4. Fold in C, mix until well-blended.
  5. Add in D, mix well.

Another project here.... ordered by my husband's cousin for her son's birthday. Simple & nice right?


& also tis... Chocolate Cheesecake for adults on the party!!!! Enjoy...

Here's the recipe :

Base :

  • 130g crushed marie biscuits
  • 30g brown sugar
  • 80g melted butter

Filling :

  • 400g cream cheese
  • 60g caster sugar ( reduced )
  • 1 1/2 tbsp cocoa powder
  • 2 tsp instant coffee powder
  • 3 eggs
  • 150g whipping cream
  • 160g melted chocolate
  1. To make base, mix all ingredients. Press mixture into 7" loose base pan. Freeze.
  2. To make filling, beat cream cheese, sugar, cocoa powder & coffee powder until smooth.
  3. Beat in eggs, one at a time, beating well after each addition.
  4. Stir in whipping cream.
  5. Add in melted chocolate, stir until well-blended. Pour filling into prepared tin.
  6. Bake in preheated oven @ 170c for 40-45 minutes or until cooked. Remove from heat & leave to cool. Chill in fridge.

TRADITIONAL BUTTER CAKE

Thinking what my kids eat for tomorrow's breakfast.... they are having cough+phlegm :-(
These 2 days they had bread with butter+sugar.... so i decided to make a cake for them, Traditional Butter Cake from Kelvin Chai.


Fine & soft texture with some margerine added !


Here is the recipe for my reference:
  • 250g butter
  • 100g margerine
  • 210g caster sugar ( reduced )
  • 1/4 tsp salt ( avoided )
  • 5 eggs
  • 1/2 tsp vanilla essence
  • 250g flour
  • 1 tsp baking powder
  1. Beat butter, margerine, salt & sugar until light & fluffy.
  2. Add in eggs, one at a time.
  3. Stir in vanilla essence. Fold in flour.
  4. Pour batter into a greased & lined 8" baking tin.
  5. Bake at 180c for 35-40 minutes.

SIMPLE OVER TURN APPLE CAKE

Bake with fruits..... this is my 1st time! :D Almost every baking & cooking recipe books i bought, some of the recipes goes with fruits. In my mind.. is ...... 'eeee' LOL
Yesterday my sister posted
this recipe & it looked nice & my mouth fulled of salivia! hahaaa.... so i decided to give it a try :D I reduced the sugar from 130g to 120g.

Wow..... looks nice & yummy! Love the caramel part ! The apple pattern here abit messy & ugly la, because using a square baking tin, difficult to decorate!hehehe :P

Make you hungry??? hahaaaa..... ate 1 when it's done & still hot !!! Super nice !!! Love it :D
Let's give it a try... worth it :D

FINALLY.... SUCCESS !

Hahaha... finally.. i made it!!! What is the reason??? Is my new oven :-( My oven needs 50-55 minutes for the cake to cooked! But i really don't understand, because the heat of my oven is very hot compare to others...100c=150c (normal oven), & why it took so long to cooked???? .....Sign...

My friend Maggie & I want to find out the reason why my cake will fall out when i inverted it! Do you know that... I tried 4 times making the same cake, but still fall out. Is because my mould??? So we decided to bake 2 flavour (pandan & orange) . 1 using my mould with Maggie's recipe & 1 using my recipe with her mould! hahaa..... 1st we tried her mould 1st... juz baked for 40 minutes. Do u know what is the result??? FALL AGAIN....... This time the cake not really cooked, so the 2nd, we baked for a longer time... 55 minutes!!!! Yippie.... SUCCESS!!!! Is not my mould... is the baking time & my oven !!!! hahaaa :D

Thank god........ finally i made it!!!!! :D


The texture is soft ...... Her recipe is abit different, cause it needs 3 types of flour compare with my older post . But i prefer mine :D
Here's the recipe :
A
  • 6 egg yolks
  • 55g sugar
  • pinch of salt
  • 32g milk +pandan juice + 1/2 tsp pandan essence
  • 46g low protein flour
  • 33g corn flour
  • 27g sponge mix
  • 1/4 baking powder
  • 55g corn oil

B

  • 6 egg whites
  • 55g sugar
  • 1/4 tsp cream of tartar
  1. Combine egg yolks, sugar and oil together. Add in milk,pandan juice & essence.
  2. Fold in flour and set aside.
  3. Beat egg whites and cream of tartar until mixture is foamy. Add in sugar gradually and beat until stiff peak.
  4. Gently fold beaten egg white into egg yolk batter until blended. (Divide into 3 times).
  5. Pour into ungreased 8" mould and bake in a pre-heated oven for 40 mins or until cooked. ~ Invert cake to cool before removing.

FAILED?

My 2nd Baked Chiffon Cake since i was in age 11 .... :D I love & miss my mum's Pandan Chiffon so much! She din't bake it for sooooooo long! Baking this cake is much much more difficult than a normal butter cake....

Yesterday my sis tried to bake
Coffee Chiffon Cake too.... A recipe adapted from Kevin Chai - Chiffon Cake is Done! I prefer pandan instead of coffee, so i did some changes! I changed the 60ml milk to 40ml coconut milk + 20ml pandan juice.

The cake rise & rise.... this picture taken while the baking still left 10 minutes..... I'm so happy with the risen :D

Look..... it's beautiful :D But....... sigh...... after 10 minute inverted, the cake fall out from the mould. So the cake can't stand..... :-( Anybody know what happen????? Is't my new mould???


See..... my cake out of shape!!! hahahaa.... BUT the texture is superb soft!


I will try it again.... Hope i can post a perfect Chiffon Cake soon. GOOD LUCK !
